The following is the e-mail response from Einstein Bros. Bagels when asked which of their menu items are vegan:
Thank you for your inquiry regarding L-Cysteine in our products. Non-synthetic L-Cysteine is used throughout the baking industry as a dough conditioner. L-Cysteine is GRAS (generally recognized as safe) by the FDA as specified in the Code of Federal Regulations. Due to issues regarding consistency of a synthetic ingredient, its unreliable availability and cost, Einstein Noah Restaurant Group, like most companies in the baking industry, does not currently use a synthetic form of L-Cysteine. The L. Cysteine used in our bagel bases is derived from duck feathers, however, we are slowly making the switch, but are unable to make a firm commitment to when it will be done. Please check back with us in the next few months and we can provide you an update.
Currently for some vegan options, you can select a salad and request the salad with no chicken or cheese and we also have fruit salads. We appreciate your inquiry and look forward to serving you in the future. |
